
Tomatoes on Dehydrator Rack

At this time of year a get a little bit obsessed with drying things. Trays and trays of apples, oranges, apple sauce (makes an awesome fruit leather) and tomatillos. However, my absolute favorite things to dry are tomatoes. I grow lots of different varieties of cherry tomatoes, but my favorite ones to dry are the tiny red currants. I also dry larger tomatoes--stupice work fabulously well--as do any fully ripe plum tomatoes. I even buy extra tomatoes, which are cheap and plentiful at the height of the season, so I will be able to eat my fill of dried tomatoes during the long, fresh tomato-less winter months.
I store dried tomatoes in small jars filled with good olive oil and then freeze them. I eat them on bread, salads and sometimes just snack on them right out of the jar.
